Bacalhau com batata doce e açafrão

30-01-2017

Ai que delícia de mix!!!

Cheguei a casa do trabalho, tinha bacalhau desfiado a demolhar do dia anterior e apetecia-me algo quente e brilhante! Pensei no que tinha para misturar e fosse rápido a cozinhar porque estavamos cheios de fome e ainda queriamos ir dar um giro, beber um chá/café por aí depois de jantar.

Para cerca de 4 refeições, utilizei:

  • Azeite q.b.
  • 2 mini pimentos coloridos picados
  • 1 cebola fatiada
  • 1 alho francês às rodelas
  • 2 dentes de alho esmagados
  • 1 batata doce grande ralada
  • 1 cenoura ralada
  • 1 embalagem de bacalhau seco desfiado (demolhada)
  • coentros frescos a gosto
  • pimentão doce e pimenta preta  q.b.

Deixei alourar e acrescentei o bacalhau.
  2. Mexi bem e juntei a batata doce e a cenoura raladas.

Resultado final, adoramos! Fica cremoso, saboroso e aconchegante. Ele repetiu...

Recipe in English (Dried salted codfish with sweet potato and yellow saffron powder)

For approximately 4 people I used:

  • Olive oil
  • 2 small colorful peppers chopped
  • 1 sliced onion
  • 1 sliced leek
  • 2 smashed garlic cloves
  • 1 big sweet potato grated
  • 1 carrot grated
  • 1 bag with dried salted codfish reduced into small pieces (first, the salt should be thoroughly removed with running water; secondly, keep the codfish for approximately 9 hours in water)
  • Fresh coriander to taste
  • Sweet chili and black pepper to taste
  • Yellow saffron powder (approximately 1 tea spoon)
  • 2 bay leafs
  • Juice of 1/2 lemon
  • 2 eggs
  1. Put a little bit of olive oil in a pan and add the peppers, onion, leek and bay leaf. Let it cook for a while and add the codfish.
  2. Mix well and include the sweet potato and carrot. Combine all the flavors by mixing it again;
  3. Add the lemon juice, sweet chili, coriander and smashed garlic. Let it cook for approximately 10-15 minutes (should keep mixing the mixture and add a bit of water not to get dry).
  4. At the end add the eggs and keep on mixing. This is a fast meal with a lot of nutrients for the cold weather; it stays very creamy and tasty.

We loved the final outcome! It is a creamy, tasty and very warming meal. He served himself twice...
